Great Low Calorie Lunch - Pita Pizza
Yep, I've fallen for that yearly tradition of setting New Year's goals, one of which is to get into better shape physically. I've been cutting calories and working out more, and just wanted to share a good low-calorie lunch I've come up with. It isn't that original, so I'm sure someone else thought of it first, but I'm going to write about it anyway. :) The idea came from a visit to The Brewery, in Wichita KS, where I ordered one of their Greek Pizzas. I'd never tried a Greek Pizza before - anywhere - and was really impressed by the flavor. I decided to try to make my own low-calorie version. And I did! It weighs in at a slim 165 calories. I like that!
1 Joseph's Flax, Oat Bran, Whole Wheat pita (60 calories)
1/3 c part-skim shredded Mozzarella cheese (70 calories)
1/2 cup finely chopped tomato (16 calories)
1 slice of red onion, sliced very thinly (5 calories)
4 finely chopped black olives (14 calories)
Spray the pita with cooking spray on both sides, top with chopped tomato, onion, olives and then the cheese. Before putting on the cheese, you can also sprinkle with Italian herbs of your choice for a more full-bodied flavor. Toss the pizza into a toaster oven and toast until the cheese is melted and the bottom of the pita is toasted and crisp. Enjoy!
